I'm here to tell you from experience a few year ago, that these are not a good idea for a small detailing business. A guy in my city actually put himself out of business with groupon. He didn't set a limit and sold hundreds at half price. Had to hire people to keep up. Couldn't afford payroll...
Full time pro here, and let me tell you, you earn every cent. Not an easy business to run. The expectations are extremely high in high end detailing and it can be down right nerve wrecking. I wouldn't change it for anything.
Absolutely will strip dressing. I do a hardcore clean/strip of my personal vehicle a couple times a year or as needed. Other than that I just wipe down and dust everything with compressed air. I reapply 303 a few times a year.
In all honesty, you probably understand carpet and leather cleaning better than the average detailer. I had to go outside the detailing industry to learn proper carpet care. I would push that and maybe even use your previous experience for your detailing marketing.

1Z is the best I ever came across. I use OPC at about 3:1 at my shop as it can be difficult to find larger sizes of 1z and it's quite costly, honestly.
