How bout some XMT360? That way you can clean, polish, and seal all together, and it's intended for minor imperfections. I am going to use XMT 360 on my new car and top with wolfgang DGPS, then Pinnacle SSII.

Man, I see it's 12 hours between the seal and then a carnouba topper, but 12 hours between each seals, then 12 hours to do the carnouba topper. That's 36 hours! This is going to take some serious planning. I might have to wake up at like 3am and do seals or something.

Something I allways take into consideration is price comparison. From the looks of it PB is cheaper, but does it require you to use more to get the job done than the P21S gel? If not, then I am leaning towards the PB simply based on saving money.
