LolI've done/seen similar in some of my adventures in life...just not in a car, but it would work just as well. You can use coffee beans tied up in a piece of burlap, or other thin fabric. We discovered using a piece of pantyhose works the best.
It's not as crazy as some people may think. For a car, you can tuck it away under a front seat and it will never be seen. The material is actually really permeable to allow the scent to escape. As fine as the material is, you could probably use grounds instead of beans.
