This is another one of my passions. Today it is 16 Boston Butts (Pork Shouder). 130 pounds precook. Will cook about 12-14 hours.

Here is my rig. Hand cut and welded by a local guy. Lives about 1/4 mile from me. 6' x 4' cooking surface. Big enough to fit a decent hog on. I will be doing a hog in July for the first time.

It is close to full today. I could fit more on, but, you need some working room and you want to avoid putting meat too close to the smoke inlet. It gets too hot and cooks too fast.

Here they are about 4 hrs into the cook. When they are done, they will be black on the outside.

Kevin,

I'm a BBQ nut as well. I cook on a Primo Oval XL ceramic grill/smoker. I was thinking about cooking a couple of pork butts this weekend as well.

Do you ever post over at Addicted to BBQ? Lots of good people and info over there.

Where do you live and what time should we all arrive? Can I bring anything?

Wow a big party this weekend?
5 of them are for my nephews college graduation. Since I was cooking on the big one anyway, My BBQing friend is coming over to help with them later and he wants 4 for himself. Then we sold the other 7 to friends and coworkers.

If you ever bring Detail Fest to Indiana, let me know. I would love to cook for something like that and get some hands instruction on while I am at it.

I have not. I will try to check that out later. Thanks for the tip.

Is the Primo similar to a Green Egg?

Indiana. about 7:30 Eastern time. Beer usually goes well with it.

Here is the back side of it. That smaller barrel is where you burn the wood. I am using straight hickory today. For a big roast, I like the bold flavor of the hickory to penetrate the meat.

Here is better shot of the smoke rolling out of the stacks.

That's a nice rig! My brother built himself one just like it. He's a welder himself.

I can smell the pork cooking now....just need some cold beers and you got your self a day! Maybe a nice cigar too!

I'm really hungry now. That looks good. I'd like to see a post when you cook the whole hog!

Great looking smoker. I'm smoking a few butts and chucks for a graduation party in a few weeks. I've got a big green egg (not very big in comparison to yours!) Had it for about 2 years now, and it is fantastic for smoking and grilling. I built my outdoor kitchen around my egg. A lot of eggers bake on theirs, but I built a wood fired oven for that. I'll be smoking a few racks of baby backs tomorrow for a pre-Mom's day celebration and then a whole filet on Sunday for all the Mom's in our family. I can smell the pork and smoke from your pics!

there is nothing like BBQing, beer, and good company

Another enthusiast here! I've got several cookers. Home built a reverse flow for the patio out back from an 80g air compressor tank (~24x48"). Have a Kingfisher rotisserie pit mounted on a trailer thats a whole lot easier to move around. Another big barrel (36"x72") cooker for the whole hog we do every year. And probably my favorite is the 18.5" WSM. haha

An outdoor kitchen is on my list. Including a wood fired oven. That looks fantastic.

My Brother and a couple of friends have eggs. They love them too. I also have a small "personal" sized smoker. I like cooking on it better, but, for big cooks, gotta do the big smoker.

Here is the little one:

We are definitely going to have to invite Jon (aka APAD). His beer setup looks like something I need to check out.

Cougarguy - I thought that was what you are talking about. I have seen those. They look nice.

Dan, sounds like you have several nice setups.

I used to use a WSM all the time. It's a nice unit.

Kevin, pizzas in the Primo or Egg are fantastic.

70Chevelle, that is an awesome outdoor brick oven!!! I would love to have one.
