One thing that might make this a complicated answer is the source of the calipers.
Are you talking about an aftermarket kit purchased directly from Brembo, or a set of calipers which came with the vehicle?
For a set of brakes which came with a particular vehicle it could be really hard to tell. The OEM might paint them themselves with their own processes/products which will vary across every OEM. An example would be my BMW. The calipers are made by Brembo, but painted by BMW...or at least painted to BMW specs for the color, etc.
From what I've seen, if the brakes are painted with a good quality paint and clear coated, they should have pretty good UV resistance. Sun doesn't seem to be the real enemy of the brakes, it's heat. A long track day or two has been known to turn red calipers pinkish, and the blue calipers (like on my BMW) will start to look a little green.
Calipers with single stage paint like the red OEM on my MK6 GTI will fade in the sun a bit and will really start to turn pink after a high heat cycle.

I assume you're talking about the hat and outside edge of the rotor. If you paint them your undermining what Brembo is trying to do. Their using the UV coating because they found it lasts longer than paint. I'm sure their paint process is more durable than any high temp rattle can paint that you'll apply. The UV coating is also more environmentally friendly as it doesn't give off VOC's like paint does in the application and curing process. I'd say run them as is. If they start to corrode then you can do your thing with whatever paint you were going to pick up at Pep Boys or wherever.
