I am using menzerna 400 and SF3500. When polishing the hood and bumper with SF3500
do I go around the headlights or polish over them? What about sealant?

I use the same polish/wax/sealant on my headlight (covers) that I do on the paint. It's strong enough to remove road film & gunk, but no so strong as to damage the plastic or plastic coating. And the wax/sealant adds protection. It also helps to see better at night in the rain by letting the water bead up and roll off instead of building up and distorting the light - try driving in the rain without your wipers sometime WITHOUT any windshield coating and see what happens. You vision through the glass will be severely distorted, just like the light trying to get through unwaxed/coated headlights.

You can use any paint polish/compound
As for sealant skip...get a ceramic coating or actual UV coating

When I polish my car's paint I also do the head and tail lights and with the same cut and polish products. Most times I switch out to my rotary and with smaller pads but it keeps them clear and glossy. My go to for them after is Opti Lens.
