There are products that you can use to help protect the windshield from water spots etc, but I'm not sure any protectant would hold up to rocks being flung up at it.
As Jason's pointed out; there are product available to protect your windshield from quite a bit, dirt, bugs, and water spots but they don't do much against rocks and stones.
