Hi my girlfriends car has pitted headlight lenses.
I was thinking off 800grit sandpaper and coating with Carpro Quartz Lite?

Would this be ok.

Can you put up a pic?

That wod determin the starting grot of paper and then your going to end with 1500 grit then buff out with wool pad if they are really bad. But like i said pic would help to determin

I agree that a picture would help.

I usually start at 500, then 800, then 1500. Sometimes I go to 3000 but really I’ll need to polish anyway so the 3000 grit doesn’t do much. Then you’ll need to compound and/or polish before washing, drying, and putting on your protection.

If you have pitting that's from car's that are spitting up fine debris on the road
That are in front, if they are deep you might not have the pollycarbnitet/plastic to spare you might need to get a new set of genuine headlights or a good aftermarket set.
