Help me plan a road trip: SLC-New Orleans

Very off-topic from detailing but need your help none the less.

I'm taking a trip with the wife and kid across country starting in Salt Lake City and ending in New Orleans and back.
We know we want to hit Denver, San Antonio and Houston either on the way there or back doesnt matter. Where else should we stop?
We wont be making any reservations or planning anything in advance, just playing it by ear but i need your help with 'must go' or 'must see' places along the way. Nothing is set in stone, not even the destination, so suggest away!
We'll have 9 days total and if we dont make it to N.O. it wouldnt break our hearts.
Driving the e39 540i and the 'kid' is a 2 year old boy with tons of energy so he'll be a big factor on how it goes.
Looking for awesome restaurants, museums, attractions in general, kids activities, neighborhoods to stay out of, etc.
If you want, i can post pics along the way of what we see and do based on your suggestions.

If you'll be driving I70 you can stop just outside of Grand Junction and see the Colo. National Monument, sort of a mini Grand Canyon where you can drive along the rim & get out to stretch your legs walking to the edge to look into it. There's also a dinosaur museum in downtown Grand Junction.

Continuing east along 70 you can stop in Glenwood Springs which has the largest hot springs pool in the world. Soak your kid in the water and a long nap is guaranteed.

Further along is Vail which will be a jammed tourist trap this time of the year. Coming toward Denver is Mt. Evans, a 14'er that has a road leading to the top. You can walk the last couple of hundred feet to the peak and see the LaSalle's to the west & Denver to the east. Picturesque.

Denver is similar to Salt Lake so I'm not sure it would provide much for you. Enjoy your vacation.

Love the suggestions. We will be driving i-70 on the way there and look for an alternate route to return.

Any one in San Antonio that can make suggestions? I think there is an Air Force museum there that we want to visit.

San Antonio is beautiful. Lots of history to see. The Riverwalk is an obvious choice along with the Alamo.

One suggestion that you can see on your way there or on the way back is Bryce Canyon. I saw it nearly 20 years ago and it still sticks with me. Amazing natural wonder.

West of Denver in Idaho Springs is Tommyknocker brew pub/resturant. Good drink and food. On the main street of Idaho Springs, exit 240.
 
When you get to new Orleans there is the Audubon Zoo, Aquarium of the Americas, and WW2 museum all of which are family oriented.

If you are craving a burger when you reach San Antonio, I highly recommend Chris Madrids. It is on my list of top 3 burgers in Texas.

Where in Denver? If downtown, the buffet in the Adams Mark Hotel on 16th St. mall has good food at a reasonable price. Seafood? Jax or Hotel Monaco on 17th. Be aware the San Diego Padres are in town & the city will be jammed so walking is the best way to get around.
 
Dragos at the base of Canal Street has some killer char-broiled oysters if you want to stop by for lunch. Commanders Palace for Sunday brunch if you want a VERY unique experience although probably not the best place to bring a 2 year old unless he is well behaved. Every Male in the restaurant must wear dress pants. Just a heads up or they will not accept you and not let you in. The food is some of the best New Orleans cuisine I have ever had. Jacques-Imo's cafe is an excellent choice for dinner. Don't drive there. Park you car somewhere safe in downtown NOLA and take a cab out there. Finding parking at jacques-Imo's is a major issue out there. I hate to scare you, but don't leave the block that the restaurant is on. As long as you stay in or out front of the restaurant your safe. It's in a really bad area, but the trip there is well worth it. All of these are in NOLA. You can also hit up Cafe du Monde if you want the best beignets in NOLA.
