I just did my son's car with McKee's 360 AIO and topped it with Hi Def Sealant. My plan is to put a coat of McKee's Poli Coat Wax over that. Should I wait a few days before topping the Hi Def or would it be ok to apply the Poli Coat right away. I have his car for the day, and would like to knock it all off while I have it if possible.

Should probably let Hi-Def cure 12-24 hours if possible, but if conditions are right (not too humid) it may not make a difference... some risk to it would be products not lasting as long as otherwise fully curing.

I have always wondered if 360 and Hi Def are redundant...

I have no doubt that the sealant in 360 is similar/same? to that of High Def. It’s questionable whether doing Hi Def afterwards is redundant... I consider it like doing a second coat of any sealant to ensure uniform coverage... whether that’s necessary or not is another topic.

360 has good enough durability that I'll do that for a light correction in spring, and a coat of hi-def for the winter. It looks good enough that I wouldn't bother topping it with anything more than a spray wax at my next wash.

I'm sure the folks at autogeek appreciate the extra steps!
