Anyone have any knowledge in ACTUAL metal polishing? How much people charge for doing pieces, or maybe someone here actually does that? Basically what its worth to go from...

What would be the quality difference in anything from 320-2000 grit sand paper?

Maybe none, but sandpaper won't be able to get into the lettering and detailed areas like sw would.

Ah now that is a very good point. To think I even looked at some when I was restocking on paper!
