This week I am picking up a brand new Tahoe. What product(s) can I use on the interior plastic surfaces to seal/protect them in the same way a ceramic coating seals/protects the exterior?
I'd like to stress that I do not want the surface looking any more glossy, shiny, greasy, etc. than it does from the factory.

I've got CarPro DLux for the exterior plastic.

I have tried a lot of interior products, but still go back to Aerospace 303.

UV protection, easy wipe off, non-greasy, and no extra "bling" shine as you mentioned.

Oh, and welcome to AGO. :)

Congratulations on the new Tahoe! :props:

Here are several Meguiar’s products
that, IMO, meets your criteria:

•Meguiars Quik Interior Detailer
(D149)

•Meguiars Ultimate Interior Detailer
(G162)

•Meguiars Ultimate Protectant Spray
(G147)

•Meguiars Mirror Glaze Vinyl & Rubber
Cleaner/Conditioner (M40)

I still use the Ultima Interior Guard, keeps dust down, cleans and protects. Unfortunately no product can make my wife's '18 Tahoe's cheap plastic interior from scratching as a slight rub with a ring, fingernail, belt buckle or purse clasp will scratch

It's not a sealant, but I like Griot's Garage's Interior Detailer as well as their Interior Cleaner.

sort of off topic, but mckees fast interior detailer is a neat little product for when you just want to touch up the interior. It's gentle enough for lcd touch screens and all surfaces and leaves behind a very subtle shine and protectant. It's not a good choice for a dirty interior, but I think it's a good add to the arsenal for whatever you go with for your protection. I think of it as a topper of sorts for my dash and interior hard surfaces.
