The advice for this is usually "ask the painter". Is this a car that was (body shop) repaired or was this more of a custom paint job?
I will note that most paints today are catalyzed and do not rely on solvent evaporation for curing, and if the painter did a bake on the car there should theoretically be no wait time.

It's been a couple years, but after my wife's car was in an accident, the body shop told us not to do anything with it for 30 days. I'm pretty sure it wasn't baked.

Yeah, whatever the body shop says. Any work I've ever gotten done was warrantied so I'd want to follow the guidelines they provide to be in compliance should any issues arise.
