Paint Masking

I recently watched the tape masking video and while I continue to be impressed with Mike and his instructional videos I am a bit confused about when to tape off my car. The vehicles in many pictures/videos on Autogeek that show machine polishing are not masked. So what are the guidelines for masking?

Obviously after claying and before compounding to reduce the effect of splattering.

I tried so many times to do it without masking, only to regret it afterwards.
