How important is polish working time for a beginner?
 
It is an important factor. The one thing you don't want to do is dry buff. Most polishes have a good working time and are user friendly.

It depends on what "polish" you are using. Some have abrasives (M205, P085rd) and some don't (BFGEP, Duragloss #105). Some abrasives are DAT (P085rd) and some are SMAT (M205). It's very important to familiarize youself with the specific characteristics of the product that you are using as well as the manufacturer's application instructions. AG does a great job of posting these recommendations for the products it sells.
