Question about Wolfgang Deep Gloss Paint Sealant

I recently used it on my car and didn't remember that it had to be left on the paint for at least 20 minutes after applying. I only left it on for a few minutes and then buffed it off with a microfiber towel. it did haze but obviously was wiped off too soon. Should I remove it and start over or would applying another coat be sufficient - (this time leaving it on the appropriate time).

Also, the sealant has been in stored in my basement for almost three years - is it too old to use?

Age wise, its highly likely that its just fine.
As long as it re-integrates when you shake it up, you're good to go.
I've got some thats at least that old and its good to go.

I'd be tempted to just apply another coat over the existing one, if you're really worried about it.

What was your indication that it was obviously wiped off too soon if it was hazed over? It may be perfectly fine.

If it hazed before wiping, you should be ok. If it bothers you, give it another coat.

If it didn't solidify it should be ok.
