Happy memorial day everyone. Thank you to everyone who has served and currently serving and to the heroes that cant be with us today!
 
Came here to state this as well.

Hats off to all those we've lost and are currently serving and protecting those of us at home. For me that includes my oldest brother who is enjoying retirement and served 12yrs in the Air Force and both my father and late brother who were in the Army.

In celebration we're kicking off a beautiful morning getting the smoker going and that goes with it ready. Inside are 3 full racks of pork ribs.

May sound silly to include the below, but this is the smoker that my father and I enjoyed together the weekend I began caring for him prior to his passing. We had a good time sharing stories around the fire pit and devouring some good eats from this. Today's smoke is in his honor. Lost him 2yrs ago this past April.

Hey man may you and your family have a great and safe holiday! Condolences about you Father. I have seen a lot of different topics discussed on this forum, but glad to see a fellow smoker. Looks like you know what is up, you got a Maverick probe sitting around the sweet spot of 225 for ribs. I have the 732 model(I think or is it 733), I love that thing. Tell me about your smoke do you foil or go straight through? What wood you using for ribs I usually use cherry or apple, sometimes some hickory, depends on how I am feeling that day. If you ever want I have a nice collection of rubs, and sauces I will be happy to share just PM me. I've been hardcore into BBQ for almost 20 years. Anyways I'll let you go you got a pit to attend to!

Haha! No worries man. Good times all around when it comes to celebrating the lives of loved ones. If dad was here, he'd be helping me with the ribs, slaw and Pasta Salad, prepping the corn and spicing up the baked beans. It's one of the few weekends I command the kitchen vs my wife.

Rib Wise, I Smoke with either the 2-2-1 or 3-2-1 method. (smoker-foil-smoker) and then finish on the grill. Today I'm using hickory chunks in a cast iron pot on top of the flame and apple juice in the water basin.

It's doing awesome today as the wind was minimal and temps stayed right at 225-230. Getting ready to put them back in the smoker for the last hour. Today is a 2-2-1 day as these are pork ribs. I do beef ribs a bit longer and shoulder or butt with the 3-2-1 method.
