i'm using ice polish and Smartwax wax/sealant.
If i use meguair quick wax or quick detailer to keep the car clean after each ride, would it remove the previous polish and wax?

No it will not remove your wax but it will remove any dust you might have.
 
Considering you're just using something to remove dust/dirt, a Quick Detailer would be the proper thing to use over a spray wax.
 
Then when do i use quick spray wax?
I believe that a quick spray wax is designed to be used on a clean, dust free surface. It requires a little more buffing then a QD and is designed to add a carnauba like gloss to your finish. QD's are made with a lot of lubricity to facillitate dust removal and reveal the underlying shine. Some are better then others at leaving a slick looking shine. You might do a QD followed by a spray wax. To make matters more confusing there are sprays like the Blackfire Deep Gloss Shine that is a polmer that goes on like a QD but leaves a slick wet shine. I wouldn't use it on a dusty surface however as it's just too expensive to use that way.
 
Rule of thumb is that QDs are for LIGHT CLEANING (i.e. light dust/dirt), and a spray wax is o "touch up" a clean surface's topping (wax or sealant). Some QDs actually are reputed to add something to the sealant/wax, but their primary use is to CLEAN.

If you're asking how you should use these 2 products, you should QD after your drive, THEN use the quick wax. You wouldn't use a paste wax over a dusty surface, would you?
