I use Detailer's Pro Series Interior Surface Protectant. I like it as it protects the surface without too much shine, lasts a long time, smells great and isn't too expensive.

I have to say this is a great tip! Here in Florida our hard water dries so quickly on the car that it always leaves horrible water spots. Thanks Kelley!
