Last week I washed/clayed/polished/sealed my truck. I used CG V36 polish and Menzerna Powerlock. I only applied one coat of Powerlock mainly because I was running short on time. I need to wash the truck this week, so is it okay to just wash it and add a coat of sealant a week after the first layer is applied? I want the sealant to last as long as possible, and from what I've read, going with more than one coat is best for that.

Yes, just make sure to give it a good washing. Re-claying or polishing shouldn't be necessary unless your paint went through some rough conditions.
