How well will a ceramic coating (Wolfgang Uber, CQuartz?) hold up to track tar and rubber? Will it protect the paint from track use and will it make maintaining the paint easier after getting a bunch of tar and rubber thrown on it?

By how much? Will tar bond somewhat well to the ceramic or will it just wipe away like dirt?

I have CQUK on my Miata and find it pretty easy to wipe away tar/tire rubber during a hand wash. If it's real bad, TarX will make quick work of the trouble spots without affecting the coating. I've got a track day with the Miata next week so I should be dealing with a lot of little black spots soon :)

I have had Optimum Opti-Coat 2.0 on my own car's wheel faces and barrels for almost 2 years now. When ever I see a tar ball stuck to them, its been so easy to just pluck them right off with my fingernail. They don't stick like normal and I haven't had the need to use a tar remover on them.
