in hot weather as here in dallas, is it better to do section at a time to prevent foam from drying on car? also, read its better to let water flow gently from hose vs spraying to prevent water spots?

Get a deionizer and keep your mental sanity.

Yes and yes to both of your questions. Although the primary benefit of flowing vs. spraying of the rinse is to leave less water on the car in the first place, thus easier drying with fewer water spots. Flowing the rinse water in of itself does not prevent water spots.

Flowing the water as you say is also known as sheeting.

Try to find some shade if you can. Just make sure your not letting an soap dry.

Rinseless washes are great for when it's hot too, you can wash and dry a panel at a time.

Put the foam-gun down...
Then quickly back away;
And, let it be known
That it's for: Always.
