How to start fresh after 2 coats of DG Environshield?

I just seriously started detailing my cars this summer; bought the Porta Cable DA and Duragloss system (Swirl Mark Remover, Pc. No. 2 and Environshield). Using both, I estimate 70% correction which was great compared to no prior detailing and years of hand washing but with light scratches on a black car. I coated with 2 coats of Environshield 12 hours apart and either use Fast Clean and Shine to detail in between washes or Aquawax as a drying agent with a full wash. Water still beads well on both cars (one modern black Porsche and an older '95 Land Rover Defender with single stage Arles blue paint which is still faded in places that the DG product and Porta Cable were not powerful enough to polish.

Now, I've got the Flex DA in addition to Wolfgang Uber, Swirl Remover and Finishing glaze and a ton of orange, white and black pads. I want to get a least 90% correction and want to make sure I remove the Environshield to restart the process. How would this be done? Also is the consensus that Environshied is very good compared to other coatings. It is certainly very easy to apply which is a big plus for me.
 
As far as coating preferences, everyone has their favorite so you'll get a varied response. I use the DG coating (enviroshield) and love it. To me, it's a great balance of ease of use along with solid performance/durability.

In regards to the coating removal, another poster recently did it with HD Polish. He didn't specify the pad. Here is the link to the post in the Duragloss Enviroshield review thread.
