can anyone recommend an interior/dashboard cleaner that won't leave it all shiny like armor-all?

Isn't the QID the one that smells like vinegar? Is so, it cleaned well but I was unprepared for the smell.

If you're looking primarily for a cleaner, I would recommend Meguiar's All Purpose Cleaner D101. If you like protection with little shine and LOTS of protection, go with 303 Aerospace Protectant.

They had a bad batch, it's not supposed to smell like vinegar lol. Call meguiars Hotline and they will send you a free bottle. It's usually smells really good.

Sometimes I use a spray wax to lightly dampen a microfiber and then wipe the dash. Technically that's UV protection and it picks up dust pretty well

This is what I typically use as well. Works great for those quick interior wipes during a maintenance wash.

If I need something stronger, albeit rare, I may use some Megs D103 diluted 10:1; then, I follow it up with QID or 303 Aerospace for the protection.

303 Aerospace has light cleaning ability, but is by no means a cleaner. There is a dedicated 303 Multi Surface that is safe for all surfaces.
