Interior coatings/protection

Hi all,
We ordered a new Tucson yesterday that will mainly be my wife's car and family long haul vehicle. She eats and drinks in it, kids eat and drink, pets, you name it. I want to protect the interior best I can. I have never really used coatings except on wheels so... what would you use on the interior for
Leather
Carpet
Plastics
