Less hazardous wheel and tire cleaner

What exactly are you afraid of OP? These products are pretty safe, especially for the casual user. If your working outside and wearing gloves, the risk of anything happening to you related to use is probably 0.0%. If your working inside and not using gloves - it's probably 0.0001%

Carwash soap is an alternative, in fact I use it regularly in a spray bottle to clean wheels, mainly because it's safer on the wheel's LSP. But, it's not very good at cleaning tires.

Can anyone point me to a single case of user of this product that had a single health issue when using it as directed?

Just one?

Totally agree as long as the wheels are regularly maintained by cleaning them. The brake dust won't be etched and baked into the wheel as long as one cleans them on a regular basis.

I have customers that the inner wheel hasn't been cleaned in the 10 years of ownership. I just ordered some grime reaper from Chemical Guys but my understanding is its more aggressive than an acid degreasing product. Clearly , this would not be the choice for the OP if their wheels are in good condition..

I use GR regularly for wheel wells. It's a great APC, but it's nowhere NEAR as strong as wheel acid. It's just CGs not representing their products accurately.
