My German is rusty, even though, I drive a German car:

Flex Manual

Page 11 " Switch on the machine before placing it on the surface which is to be polished and run the polisher up to the set speed."

Like this is not how I've been schooled.

What is (see pages 10, 12) "Mains Plug" If I were to guess it's the allen bolt, in the center of the velcro plate, which would be unscrewed by supplied allen wrench?

Nice pick up!

Stick to what you know. Turn on the polisher after you have the pad against the surface of the paint.

The Allen key will remove the backing plate so that you can switch out different sizes of backing plates if you decide to.

Mains Plug means your electrical outlet. Well at least in the UK when they say "plug into the mains". That's what it is. They are telling you to unplug the Flex.
