This car is the first I've had with suede/microsuede/alcantera on the seats. So I'm not sure what to use on them IF they get dirty, and also just how to keep them looking good on a daily basis.

What do you all use on this material?

Keep it clean. Whether it be with water or something really light like cockpit...
Brush it once in awhile. The key is keeping it clean so oils, etc won't mat the fiber.
Be careful and do the step over in/out to mitigate bolster wear
 
Sonax makes a cleaner specifically for Alcantara.

another $50 spent at Autogeek.
Doesn't Ohio have some kind of a
Law, or something on "The Books",
regarding this/these issue(s)?

First step is to read the Owner's Manual for advice on cleaning the upholstery. Enjoy your new ride!
 
Like mentioned above, Sonax makes an alcantara specific cleaner. It works really well! i would highly suggest you check it out and give it a try.
 
I've used Folex straight undiluted with amazing results on alcantera, once cleaned protect with ScotchGard.
