Just bought a new 2016 in white pearl. Question is do I use a coating or stay with a sealant/carnauba? The reason I ask is because it is hard to make white paint "pop" and I was thinking that a coating might not look as good and I might be better off with an occasional Polish and sealant like WDGPS. What is your opinion?
 
The best way to make white paint pop, IMO, is to have it surgically clean and have deep black trim/tires.

My suggestion for white paint now and for the foreseeable future is always going to be a thorough Iron-X decontamination followed by Duragloss 501/601, then maintained with Aquawax. This is how I maintain my parents' white cars and they always look great.

It's also very durable.

If it's a daily driver assess how much time you really want to spend keeping it perfect. You might get more 'pop' from a sealant-carnuba combo. But the protection and shine from the coatings is awesome. Not to mention the ease of care going forward.
 
There have been several reviews of using WG Uber Coating on white that makes it look like glass. Its something I am going to try on my white "show car" soon. A coating will definitely make the car easier to maintain in the long run.

-Wash
-Decontaminate...IronX, or a similar product
-Clay...per: "The Baggie Test"
-Polish...Optimum Poli-Seal
-LSP...Optimum Opti-Seal

On white (my truck is white) I like a sealant and top with DG Aquawax. My truck is lifted and on black ProComp alloys with tires white letting facing inwards, like mention certain trim or like that wheel/tire combo makes the white look really good. Have Poli-Seal but just ordered some DP sealant to try.
