If you're asking about the reason for taping in general, miniSguy covered it completely. If you're talking about the pics/vids of two areas separated by a strip of tape, those are to clearly show the line between two areas that are being compared - before and after. There are also some pics/vids you've probably seen where a section of the car (hood, fender, etc.,) is sectioned into 2'x2' squares. Many noobs will tape off 2x2 sections and work them one at a time since that's the ideal size of a section to work... not too big and not too little. They'll do that until they get the feel for that size section in their minds then the tape is no longer necessary.
I use the automotive paint tape and not the blue stuff you get at Lowe's. You can get it here on AG or any auto parts store in varying widths for your specific application.

I have and use 3M 233+ (green) automotive tape and have no complaints. It's available at any local auto parts store and works great.
