WG 3.0 Deep Gloss Paint Sealant over Klasse Sealant Glaze?

Doable or just wasting time? I thought it might bring out more shine and/or an extra step of protection.

I would say don't do it.
A lot of times, sealants prefer either clean paint, or themselves to bond to.
Just put another layer of KSG if you want to try to get more protection.

Agreed layer KSG and your good. I do it often. If anything I just top it with 845.
