As far as attainable cars, i'd choose either a Nissan GT-R or Porsche GT3. Nissan GT-R is the absolute quickest and best handling car i've driven. Porsche GT3 because race car.

BMW M3 was my favorite car owned so far.

Of all the Muscle cars, none compare to the 1970 Hemi Cuda for me both in terms of looks and raw power.

That Porsche is my #2 favorite car of all time. The first being this, but in blue with the white racing stripes down the hood.

Koenigsegg Agera...possibly the greatest (or top 3) hypercar ever to be built. The engineering is second to none.

Unfortunately, my 36" inseam legs are to long to be properly cinched down in the short cockpit, so I've never driven one at speed. I've been building and wrenching on them for over 25 years, but never have been able to experience the dynamics that take place when you're going thru a turn at 100+ mph on dirt.
It still is a big rush to watch the thing go around when everything clicks; You've got the car hooked up with the setup dialed in just right and the driver's sharp enough to get everything the car has to offer. It's an infrequent but satisfying reward for all the late nights in the shop and the frantic thrashing in the pits when you're trying to stay ahead of an ever-changing racing surface.

1960's Mercury Cougar. I'd love to find a decent running barn find one day and fix 'er up! I've had an 85 and an 89 Cougar. Loved them both, too!

For a modern car, it'd have to be a Ford GT.
 
Not the best Ferrari but I like them..
