Yeah, some folks do "beef birria" and I recognize that it's technically a thing but, to me, it's the same as when I order shepherd's pie and get beef instead of lamb (the former being the main protein in COTTAGE pie). It can be a regional thing. The restaurant I was recommending to Klasse serves food from the state of Jalisco; I'm sure there are many birrierias in Chicago I've yet to try but I've tried a lot and none of them serve beef. It's like gosht, I think - while most of the Indo-Pak places I go to serve lamb/mutton there are a couple where gosht is goat and even some where it's beef.or beef
In general, if you go to a birrieria in Chicago you will be served goat with no other meat option (at least for the birria); no doubt there's other regions where what's standard is going to vary.
My folks were from Philly but we mostly grew up elsewhere. Grade school jaw dropping moment was being back up north visiting family and seeing Kraft "cheese" that wasn't orange! Like my HS history teacher used to bellow "Frame of Reference!".
