They are worlds apart as far as being user-friendly as well as gloss and smoothness/slickness on the surface. In these regards, Pinnacle coating is worlds better.
I think the real question that still needs to be found out is the protective quality and durability of the pinnacle coating. In regards to opti-coat its been proven over and over that its a very substantial coating that LASTS and LASTS. The only downside is the grippy/rubbery feeling of the paint, the tricky application of the product and the very (and I mean VERY) sterile shine that it leaves. It also has issues with water spots etching in extremely quickly.
Pinnacle applies and removes pretty much easier than any product including wax. It leaves an extremely glossy and wet looking shine, and the paint is super slick and feels smooth to the touch. The only downside is that its not yet proven to be able to last 3 years or significant beading and sheeting. With Opti-Coat you know for absolute certainty that is you get the paint clean and decontaminated, your paint is going to bead and sheet like the day it was applied.
If I was a professional and was upcharging for a coating application I would feel more confident using Opit-coat. As an enthusiast for my personal car I would much rather use Black Label coating for the benefits I described above.
