An hour on claying? Get yourself a nanoskin autoscrub pad for the DA or a speedy prep towel and cut that down to 20 minutes.
For me to compound with a rupes 21 is 3-5 hours including taping off. With rotary and wool and can cut that down to 2 hours, but I rarely go to the rotary for compounding anymore. An interior with what you do is 3 hours minimum for me; that puts me at 8 hours for 2 steps, maybe 3. For all your steps I'm probably at 20 hours and easily $800, put a coating in there and it's not hard to hit $1K. I don't do many of those jobs, but they exist in the car enthusiast market.
If you and your customers are happy at $20/hr +/- then I'm I'm not in a position to judge. You live in one of the most populous places on the planet - there is definitely a market for $1k plus detailing. There's at least a couple guys on here from NYC and NJ that are in that range.
