Claying is going to remove the coating. It's job is to be a sacrificial layer in order to protect the paint and clear coat. It's pricey, but that premium is insurance to protect everything.
It will not remove a ceramic coating. The risk is the chance of marring the surface. I've clayed my own personal cars that are coated to prep them for a re-coat and not one time has clay ever removed a coating.
