Should I invest in a dry mil gauge right away or when I start doing more paint corrections with my new business? Their most affordable unit is $495 that connects via bluetooth to your phone.

I would not compound or wet sand without one.
 
I may get some flack over this but you don't need to spend $495 on a unit. Not unless you want one that does plastics and or non steel. That's my opinion and I've been using what I have for years for about $125-150 range. I can spot paint work on vehicles pretty easily so bumper covers and plastics aren't hard to see. Write up a good terms and conditions doc and it will help cover you for any work done to the car. Use the gauge as a guide for sure and as a good safety protocol. I personally wouldn't touch a car without one. Not one that isn't mine.
 
A must have tool. I'll agree with TTQ, I too used a similarly priced unit before I upgraded.

I bought my Highline for $120. Hard to go wrong at that price.
