Are both the V8 models? Comparing the 2017 V8's, the Camaro has an extra 20 ponies at 455.

One extra bit of advice: get the insurance!

Typically no... The Convertible Mustang will be the Ecoboost and the Camaro will more than likely be the 4cyl Turbo. Unless Kevin is paying big $$$ for a high specialty vehicle. If he just selected "convertible" those will probably be the choices.
 
Enjoy your trip! It will be one epic drive! Memorable to say the least! ENJOY the 7 mile bridge, probably the best part of driving, specifically in a convertible!

Lunch spot on the way in Key Largo: Hobo's Grille. Right on US1. Awesome place!

Stop at Robbie's Marina in Marathon and feed the Tarpon! Super cool thing to do.

The Turtle Hospital is also in Marathon and is a neat place to tour to see the sea turtles they help there.

I'll comment on Hertz since I'm a Gold member with them for over 20 years. They have various options for convertibles depending on your budget.

Here is a list:

Porsche Boxter- DREAM CARS
Chevrolet Corvette Stingray Adrenalin collection

They also have Ford Mustang but I believe that they are not convertibles.

Hertz Shelby GT Mustang Adrenalin collection

If it's a Dream car or Adrenalin collection you are guaranteed to get that model.

The only question that remains is what's your budget.
