By far my favorite interior dressing is Optimum Protectant Plus. As the description indicates, it leaves a matte finish that is silky (not oily) to the touch, provides good UV protection, and lasts for months. Plus, it helps to repel dust instead of attract it. Best of all, it's eco-friendly, as are all of Optimum's products.
I applied it to the interior of my Mazda3 and at about 4 months, it's still going strong. I had cleaned a test spot with a product I received which revealed my findings. See pics in this thread:

Other products that I have tried are 303, DP Interior Protectant, PB's Natural Look, and a few others I can't remember. If you don't go with OPP, I'd vote for 303 for great UV protection. Plus, I believe you can cut it 1:1 with water for an even more matte finish.
