I did make everything I posted. It's hard to tell, but I can assure you the favas were removed from their shells, they were just huge. I'm fortunate to have a very good fishmonger, so even though I'm as far from the ocean as you can get in the US, I can still get fish cheeks with a couple days notice. We also have several really good co-ops so morels, ramps, blood orange and favas are all readily available when they come into season. Thanks for the kind words.
Man you are living large and show some real culinary talents.Most people dont know of fish cheeks(what species?), ramps and Morels let alone how to cook them.Whats next...fiddle head ferns, Waygu steaks, puffer or lion fish, rattlesnake sausage, pecan truffles, durian fruit, sea urchins or maybe a nice plate of tuna hearts and a dessert made with Venezuelan chocolate? :hungry:
