I'll follow up, since I started this thread and asked the original question. Probably should have done this long ago.
The behavior I saw which lead me to believe the coating had failed, was most likely the result of the grime from winter driving simply getting imbedded in the coating. As the weather improved I started hand washing the vehicle again, and after a 3~4 good washes with my regular car shampoo, the beading/sheeting returned.
This experience and a similar one with a different coating has made me a firm believer in keeping the coatings clean in order to maintain the beading/sheeting behavior everyone loves. I will say in the case of the McKee's, the appearance and ease of washing never dropped off. During the dark of winter, the coating might get really grimy, but it still appears to be doing it's job and protecting the paint.
